1-1 GF14 and GF40 SERIES GAS FRYERS CHAPTER 1: GENERAL INFORMATION 1.1 Parts Ordering and Service Information In order to assist you as quickly as possible, the Frymaster Factory Authorized Service Center (FASC) or Service Department representative requi res certain information about your equipm ent.
1-2 1.2 Safety Information Before attempting to operate your unit, read the instructions in this manual thoroughly. Throughout this manual, you will find notations en closed in double-bordered boxes sim ilar to the ones below. CAUTION boxes contain information about actions or conditions that may cause or result in a malfunction of your system .
1-3 The burner assembly can be configured for natural gas, propane, or manufactured gas, as required by the customer. A drain is tapped into the cente r of the frypot, with a front-controlled manual ball valve. Each fryer is equipped with a thermostat for precise tem perature control.
1-4 1.6 Shipping Damage Claim Procedure Your Frymaster equipment was carefully inspected and packed before leaving the factory. The transportation company assumes full responsib ility for safe delivery upon acceptance of the equipment for transport. What to do if your equipment arrives damaged: 1.
2-1 GF14 and GF40 SERIES GAS FRYERS CHAPTER 2: INSTALLATION INSTRUCTIONS 2.1 General Installation Requirements PROPER INSTALLATION IN ACCORDANCE WITH TH E INSTRUCTIONS THAT FOLLOW IS ESSENTIAL FOR EFFICIENT, TROUBLE-FREE OPERAT ION OF YOUR FRYER. ANY UNAUTHORIZED ALTERATIONS MADE TO THIS EQUIPM ENT WILL VOID THE FRYMASTER WARRANTY.
2-2 DANGER Do not attach an apron drainboard to a single fryer. The fry er may become unstable, tip over, and cause injury. The appliance area must be kept free and clear of combustible material at all times.

2-5 Your fryer is configured at the factory for either natural gas or Propane (LP) gas. If you desire to switch from one type of gas to another, a Fact ory Authorized Service Center technician must install a gas conversion kit. Call Frymaster Service (1-800-551-8633) to determ ine the conversion kit appropriate for your configuration and altitude.
3-1 GF14 and GF40 SERIES GAS FRYERS CHAPTER 3: OPERATING INSTRUCTIONS 3.1 Start-Up Procedure CAUTION If this is the first time the fryer is bei ng used after installation, refer to Section 3.2, Boil-Out Procedure. CAUTION The cooking oil/shortening capacity of the GF14 Series fry er is 40 lbs.
3-2 3. Push the knob in and light the pilot. Con tinue to hold the knob in for about 60 seconds after the flame appears on the pilot. Release the knob. The pilot should remain lit. CAUTION If the pilot fails to remain lit, wait five minutes before attempting to re-light.
3-3 6. Rinse the frypot at least twice by filling the fr ypot with clean water and draining. Dry the frypot thoroughly with a clean, dry towel. DANGER Remove all drops of water from the frypot before filling with cooking oil or shortening.
3-4 The thermostat is in the full OFF position when the word OFF is at the top of the knob. A “click” will be heard when the knob is rotated from the OFF position to a tem perature, or when it is rotated back to the OFF position. The thermostat may require calibration f rom time to tim e.
3-5 NOTE: If draining the fryer to dispose of the cooking oil or shortening, Frymaster recommends the use of a wheeled disposal unit equipped with a pum p, such as the Frymaster SDU 50. When using a dispos al unit, follow the unit m anufacturer’s instructions.
4-1 GF14 and GF40 SERIES GAS FRYERS CHAPTER 4: PREVENTIVE MAINTENANCE AND OPERATOR TROUBLESHOOTING 4.1 Daily Checks and Services Inspect Fryer and Accessories for Damage Look for loose or frayed wires, leaks, foreign ma terial in frypot or inside cabinet, and any other indications that the fryer and accessories are not ready and safe for operation.
4-2 Clean Detachable Parts and Accessories As with the frypot, a deposit of carbonized oil/shortening will accumulate on detachable parts and accessories such as baskets and sediment trays. Wipe all detachable parts and accessories with a clean cloth dam pened with a detergent solution.

Reinstall tube and bend it so that the opening is pointing downward. 4.3 Semi-Annual Checks and Service Check Burner Manifold Pressure WARNING This task should be performed by qualified service personnel only . WARNING The frypot must be filled with water or cooking oil/shortening during this procedure.
4-4 5. If the burner manifold pressure does not meet the specifications in the tables in Step 4, unscrew the slotted cap from the top of the gas valve regulator (adjacent to the gas valve vent tube) and turn the adjusting screw to obtain the correct pr essure.

4-7 Problem Probable Cause Corrective Action A. Loose, dirty or corroded hi-limit wires. A. Clean/tighten hi-limit wires on gas valve. Pilot remains lit when gas valve knob is pushed in, but goes out when released.
