YSCFC SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-1 1.1 Functional Description YSCFC Series Flatbottom gas fryers contain a welded steel frypot (m ild steel) with heat-transfer ducting on the frypot bottom for efficient heating of oil without scorching.

YSCFC SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-3 Safety Components All YSCFC Series Flatbottom gas fryers are equipped with a high-limit thermostat . In the event that the fryer fails to properly contro l the oil temperat ure, the high-limit therm ostat prevents the fryer from overheating to flash point.

To adjust burner gas pressure, remove the cap from the gas valve regulator an d adjust to co rrect pre ssure (arrow s hown at right). 6. Current production systems have a sensor bulb clamp that must be rem oved prior to removing the probe or high-limit from the frypot (pictured top right).

YSCFC SERIES FLATBOTTOM GAS FRYERS CHAPTER 1: SERVICE PROCEDURES 1-14 10. Remove firebox back, along with insulation from back of frypot. From the rear of the unit, use a prying bar to carefully pry the top assembly from the frypot and cabinet frame (single units only), and set aside.

Use spray adhesive ( Zep Aero Tac High-Strength Spray Adhesive or equivalent) to install new insula tion in firebox bottom as shown.

A m elted or distorted ignition module is automatically suspect and should be replaced, but unless the condition causing excessive heat in the fryer is corrected, the probl em is likely to recur.
