13 Preparing the dough 1. Fit the dough hooks. 2. Place the dry ingredients into the mixer bowl. Always keep dried yeast away from the salt or your bread will fail to rise. 3. Set the mixer to 1 and the bowl speed control to LO . 4. Begin to gradually add the liquid ingredients to the bowl.

Knead lightly on a well oured surface for 3-5 minutes until the dough is smooth and elastic. Cut the dough into 12 portions and roll each portion across the bench, until an even soft ball.
