FEATURES & SPECIFICATIONS Forced Convection Fo od Holding Cabinet The Crisp n’ Hold provides a heated stream of air to maintain fried food tem perature and freshness for a specified period of tim e after cooking. Forced air is he ated through an electric resistance heater and ducted to a food grate.
UNPACKING AND INSPECTION Remove the cabinet from shipping carton, ensuring that all packing ma- terials and prot ective plastic has been remov ed from the unit . Inspect all components for com pleteness and condition. If any freight damage is present, a fre ight claim must be fil ed immediately with the shipping company.
INSTALLATION & START-UP Location For proper op eration and maximu m performance, locate the Crisp n’ Hold in an ambient air tem perature of 70º F (21ºC). Avoid areas near exhaust fans where there is active air movement. For safe operation, locate the unit a reas onable distance from com- bustible walls and materials.
NORMAL OPERATION Daily operati ng proced ures 1 . Prior to use, unit must be installed pr operly and tested by a trained installation or servic e professional . 2 . Unit must be cl ean and gre ase-free prior to us e. 3 . Verify that the grease pan, heat duct and air filters are installe d properly.
CLEANING PROCEDURES 1 . After all food products have been removed fro m the cabinet, turn the power switch to “OFF” and allow the cabinet to cool. 2 . Unplug the unit prior to any cleani ng. 3 . Remove and clean the grea se / crumb pan fro m the bottom of th e unit by sliding it out towards the operators side of the unit.
