– 3 – Installation, Operation, and Care of MODEL 3613 & 3713 SLICERS SA VE THESE INSTRUCTIONS GENERAL The model 3613 and 3713 slicers are equipped with a 1 ⁄ 2 HP motor and are available for single-phase electrical service. The slicer features the Hobart CleanCut TM 13" diameter contoured stainless steel knife.
– 4 – PRODUCT TRAY The P RODUCT T RAY (Fig. 1) must be installed on the slicer. To install the P RODUCT T RAY on the slicer, lower the bottom of the S UPPORT A RM onto the C ARRIAGE H INGE P INS (Fig. 3). Tilt the P RODUCT T RAY toward the G AUGE P LATE .

– 7 – SLICING — MODEL 3713 • Close the G AUGE P LATE by turning the I NDEX K NOB fully clockwise (Fig. 7). • Pull the P RODUCT T RAY (Fig. 7) all the way toward you until it reaches its stop (this is the home position). • Raise the M EAT G RIP to the top of the P RODUCT T RAY , and rest the P ARK P IN on the M EAT G RIP S LOT .
– 8 – CLEANING This machine must be thoroughly cleaned and sanitized at least as often as required by local regulation or after being idle for an extended period of time. The slicer knife is very sharp. Exercise extreme caution when working near the knife.
– 9 – Clean completely around the R ING G UARD by working a moistened, folded paper towel between the R ING G UARD and the K NIFE (Fig. 15). Wash, rinse and sanitize both sides of the K NIFE by wiping outward from the center. Never clean any part of the slicer with steel pads.
– 10 – Using the Knife Removal Tool Accessory Unplug the machine power cord and turn the index knob fully clockwise to close the gauge plate before cleaning the slicer. To Remove the Knife . . . • Remove the T OP K NIFE C OVER and the plastic R ING G UARD C OVER (Figs.
– 11 – To Reinstall the Knife . . . • Orient the R IDGE on the K NIFE H UB so it points to the P IN on the R ING G UARD at the 1 o'clock position (Fig. 24). • Place the K NIFE and T OOL so the P IN on the K NIFE R EMOVAL T OOL is at the 11 o'clock position (Fig.
