27 Poultry The weights indicated in the ta ble refer to oven-ready poultry (with out s tuffing). Place w hole poultry on the lower wire rack breast-side down. Turn aft er Z of the sp ecified time. Turn roasts, such as roll ed turkey joint or turkey b reast, halfway through the cooking time.
28 Fish Turn the p ieces of fish after Z of the time . Whole fish does not have to be turned. Place the wh ole fish in t he o v en i n it s s w im mi ng p osi ti o n wi th its dor sa l f in fac i ng upwards. Placing half a potato or a small ovenp roof container in the stom ach ca vi ty of the fish will make it more sta b le.
