- 3 - INSTALLATION, OPERATION AND CARE OF HEAVY DUTY GAS GRIDDLES GENERAL Heavy Duty Gas Griddles are produce d with quality workmanship and mate rials. Proper installation, usa ge and maintenance of your griddle will result in many years of satisfa ctory per formance.
This griddle is Design Certified f or installation on a non-combu stible counte r with 4” legs, or combustible floor with 25 ” high stand. INSTALLATION CLEARANCES COMBUSTIBLE CONSTRUCTION NON-COMB.
Casters are only sup plied on a griddle stan d. If the griddle is moved for any rea son the griddle sh ould be re-lev eled (see LEVELING in this manu al). FLUE CONNECTIONS Do not obstruct the flow of f lue gase s from the f lue, locat ed at the rea r of the gr iddle.

- 7 - SEASONING THE GRIDDLE Season the gr iddle to avoid po ssible surf ace corrosio n before first u se, and after every cleaning. He at griddle to a low temperature (3 00-350°F) and a pply a small amoun t of cooking o il – about one ounce per square f oot of surf ace.
900RX PILOT LIGHTING PROCEDURE 1. Turn all thermostats to the OFF position. Wait 5 minutes to allow any gas that may have accumulated in the burner compartment to escape. 2. Turn on the main gas shut-off valve. 3. Push the power switches to ON. The switches will illuminate and you will hear a “clicking” sound.
USING THE GRIDDLE To preheat, turn th e burners on about 20-25 min utes before cookin g. A uniform and sy stemat ic approach to loading the griddle w ill produce the mo st consistent product re sults. The griddl e plate is steel, but t he surface is relativ ely soft and can be scored or dented by careless use of a sp atula or scraper.
- 10 - CLEANING THE GRIDDLE Empty the gre ase drawer as needed thro ughout the day and reg ularly clean at least once daily. Clean the grid dle regularly.
ADJUSTMENTS CALIBRATION 1. Each thermostat co ntrols a 12” zone of the griddle. Usin g a Surface P robe temp erature measurement de vice, observe the te mperatures at the center points of t he cookin g zones.
LEVELING The griddl e must be level (side-to -side and front- to-back) during operat ion to ensure proper perfo rmance. Improp er leveling can r esult in uneve n temperature distr ibution, cold spots, and po ssibly damage el ectrical components. 1. Place a level on the g riddle.
