10 Colors and display Colors The various colors ser ve t o guide you in the various adjustment situations. Presentation The presentation of symbols, values or the entire display changes depending on the situation.
11 Cooling fan Y our appliance has a cooling fan. The cooling fan switches on during operation. Depending on the appliance version, the warm air escapes above or under the door . After removing cooked f ood, keep the door closed until the appliance cools down.

15 Before firs t use Here you find out what you hav e to do before preparing meals with your appliance f or the firs t time. Read the section entitled Important safety notes beforehand. The appliance must be completely fitt ed and connected. The "First settings" menu appear s in the displa y af t er the mains has been connected.
16 Setting the date The default dat e appears in the display. The da y setting is already active. 1 Set the required day with the rotar y selector . 2 Switch to the month setting with the C symbol. 3 Set the month with the rotar y selector . 4 Switch to the year setting with the C symbol.
17 Confirm with ™ . The appliance enters the standby mode and the standby display appears. The appliance is now ready for operation. Calibrate the appliance bef ore steaming f or the firs t time. The appliance sets the boiling point. Calibrating The boiling point of water depends on bar ometric pressure.
18 Wat er filter Operation with or without water filt er Y ou can use the appliance with or without a water filter . It is recommended to install the descaling system GF 111 100 if the water hardness e xceeds 7°dH (carbonate hardness 5°dH). Change water filt er Filter cartridges should be replaced regularly.
19 Operating the appliance Oven interior The cooking compar tment has f our shelf positions. The shelf positions are counted from the bott om up. Note: When steaming, defrosting, dough proofing and regenerating, you can use up to three insertion levels at the same time (levels 2, 3 and 4).
20 Misting Misting brings additional steam t o the oven interior . Y ou can add moisture to food while cooking, f or example bread and rolls. Misting is only possible with these heating functions: ▯.
21 Timer functions In the timer menu, set : Š Timer p Stopw atch 6 Cooking time (not in the idle state) 5 Cooking time end (not in the idle state) Launching the timer menu Y ou can launch the timer menu from any mode. Only from the fact or y settings, program selection is set to S , the time menu is not available.
22 The timer menu is closed and the time runs. The p symbol and the elapsing timer are shown in the display . Stopping and restarting the stopwatch 1 Launch the timer menu. 2 With C , select the "Stopw atch" function p . 3 T ouch the H symbol.
23 Canceling the entire operation: Set the program selection to 0 . Note: Y ou can also change the heating function and temperature during the cooking time. End of cooking time Y ou can defer the end of the cooking time until later . Example: it is 2 pm.
24 Sabbath mode and Y om T ov mode Sabbath mode With this function, the appliance maintains a temperature between 120 and 450°F (50 and 230°C) with the convection heating function. Y ou can keep dishes warm f or up to 74 hours without having to switch on or off.
25 Y om T ov mode With this function, the appliance is programmed to per f orm in three stages. Stage 1 and 2 can be programmed for a maximum t otal duration of 74 hours. The duration of Step 3 is 1 hour and cannot be modified. Stage 1: maintains a warm temperature of 122° F (50°C) in the convection heating function.
26 Personal recipes Y ou can save up to 50 individual recipes. Y ou can record a recipe. Y ou can assign these recipes a name so that you can fall back on them quickly and conveniently if you need them. Recording a recipe Y ou can set up to five phases in succession and you can record them.
27 Entering a name 1 Enter the recipe's name under "ABC". 2 Save with ™ . - or - Cancel with ' and quit the menu.. Note: For ent ering a name, Latin characters, cer tain special characters and numbers are available. Star ting a recipe 1 Set the program selection to an y heating function.
28 Core temperature probe The core temperature probe enables exact cooking t o the spot. It measures the temperature inside the f ood being cooked. Aut omatic switching of f when the desired core temperature is reached ensures that each cooked f ood is cook ed precisely.
29 Setting the core temperature 1 Inser t f ood into the oven int erior with the core temperature probe inserted. Inser t the core temperature probe in the sock et in the oven interior and close the appliance door . Do not jam the core temperature probe's cable! + and the current core temperature appear in the display .

36 Dr ying program With the dr ying program, you can dry the cooking compar tment after cleaning or af t er steaming. The dr ying program tak es 20 minutes. Star ting the drying program 1 Remov e accessories from the cooking compar tment. Wipe out the cooking compar tment.

39 Power cut Y our appliance can bridge a power cut of a few seconds. Operation continues. If the power cut was f or a longer period and the appliance was in operation, a message appears in the display . Operation is interrupt ed. Set the function selector t o 0 , then the appliance can be operated again as usual.

41 T ables and tips Note s ‒ The cooking times specified are intended as a guide. The actual cooking time depends on the quality and temperature of the f ood before cooking, the weight and thickness of the f ood to be cooked. ‒ Always preheat the appliance.
42 Fish ▯ Steaming does not dry out fish and its intrinsic taste and te xture are preser ved very well. ▯ For reasons of hy giene, fish and other critical foodstuffs should have a core temperature of at least 143 - 149° F (62 - 65°C) af ter cooking.
43 Fish – low -temperature steaming ▯ When steamed at between 70 and 90°C (appr ox. 160 and 190 °F), fish does not overcook and f all apar t so easily . This is par ticularly advantageous for sensitiv e fish. ▯ The data for the various fish types ref ers to fillets.
44 Meat – cooking at higher temperatures ▯ The combination of steam and hot air is the optimum cooking process f or many types of meats. In this mode of operation, the oven compar tment is sealed hermetically and moisture prevents the drying-out ef fect of the con ventional hot air .
45 Meat/poultr y – slow cooking ▯ Vigorously browned meat matures over a longer time at a lower temperature. As a result, the meat evenly becomes gentle pink and extraordinarily juicy apar t from a very thin edge. And it is neither necessar y to turn the meat nor pour juice o ver it.
46 Poultr y ▯ The humidity during combined operation prevents dr ying out which, especially in the case of poultry, is crucial. At the same time, the high temperature lends crispy browning t o the sur face. The heat transmitted by the hot st eam is twice as high as in the case of conventional hot air and it reaches all par ts of the f ood.
47 Grilling ▯ Use the dif f erent grilling modes to further brown dishes. ▯ Inser t the dish on lev els 1 to 3 (from below) when grilling. ▯ Use the dif f erent levels f or the desired grilling ef f ect. On level 1 from belo w the grilling ef f ect will be lighter , on level 3 it will be stronger .

50 Bread rolls (50 - 100 g each - approx. 1.8 - 3.5 oz.) Unper f orated 355 - 390 (180 - 200) 80 - 100 15 - 25 Y ou can bak e bread rolls ver y well as f ol- lows: Preheat to 430°F (220°C) with 30 % humidity . Af ter placing y our items for baking in the appliance, st eam once to twice and switch back t o 0 % and 375°F (190°C) after 5 minutes.
51 Regenerating (warming up) ▯ In the steam ov en, you can generate the optimum climate f or warming ready-cooked meals without them dr ying out. Thus, taste and quality are preser ved, and meals taste lik e freshly prepared. ▯ Use the "Regenerating" mode d t o do this.
52 Thawing ▯ In the steam ov en you can gently and evenly thaw deep frozen foods f aster than at room temperature. ▯ Use the "Defrosting" mode W to do this.
53 Boiling down ▯ In the steam ov en, you can preser ve fruit and vegetables without much effor t. ▯ If possible, boil down f oodstuf fs directly after shopping or har vesting. Prolonged st orage reduces vitamin content and leads easily to fermentation.
54 Preparing yoghour t ▯ Y ou can prepare your own yoghour t in the steam oven. ▯ Heat up pasteurized milk t o 195°F (90°C) on the cook-top t o avoid disturbing the yoghourt cultures. Ultra heat treated milk (UH milk) does not need heating. (Note: If you produce y oghour t with cold milk, this will prolong the maturation time.
