13 THE TOP OVEN The top oven is th e small er of the two ovens. It is heated by eleme nts in the top and bo ttom of the oven. It is designed for cooki ng smal ler quantit ies of food. It g ives esp ecially good res ults if used to co ok frui t cakes, sw eet or savou ry flans o r quiche .
