6 Getting to Know Your Oven Wall Oven Getting to Know Your Oven Before Getting Started, Become Familiar with Your Oven. Parts of the Oven Control panel: Your oven’s control panel consists of key s and a display. You use the control panel to control all the ov en’s features (sometimes called modes).

8 Getting to Know Your Oven Wall Oven The Control Panel layout Control panel display: The control panel display provides v arious types of information about your oven, including the current time (once the cloc k is set), the current cook settings, and the avail able cooking modes.
9 Getting to Know Your Oven Use and Care Manual NOTE: If you have not used the oven for an extended pe riod of time the display will go to “sleep”. When the display is sleeping, it is not lit. To wake the disp lay (make it reappear), p ress one of the keys on th e control panel or open the oven door .
10 Oven Setup Wall Oven Oven Setup NOTE: If you have a single oven , you cannot set the clock, temperature scale, display colors, keyp ad tones, or disable the oven lights while the oven i s in use. If you have a double oven , i t i s b e s t n o t t o change these settings while the ove n is in use.
11 Oven Setup Use and Care Manual • Using the number keypad, enter the current time. For example: For 12:43 Press 1 , then 2 , then 4 , then 3 . • Press the AM - PM key to change A M to PM or change PM to AM as needed. • Press MO NTH . Enter the current month on the keypad (for example: for June, press 0 , then 6 ).
12 Oven Setup Wall Oven Enable/Disable the Clock Disabling the CLOCK allows you to make the clock disappear from the control panel display. The clock will remain set to the correct time if y ou decide to en able it later.
13 Oven Setup Use and Care Manual • Press TEMP °F/°C . • Press CELSIUS or FAHRENHEIT , then press OK . • Press CANCEL/SECURE to return to the home screen. Display Colors The colors for the display are preset to SI LVER/GRAY a t th e f a c to r y.
14 Oven Setup Wall Oven • Press DISPLAY COLOR . • Press the AMBER , BLUE/GREEN , or SILVER/GRAY key. You may also press REVERSE COLOR to switch the background color with the text color.
15 Oven Setup Use and Care Manual Oven Tones If you want to change the tone or volume of the beeps that are heard when operating the oven control panel and when the timer expires: • Press the CANCEL/SECU RE key to return to the home screen. • Press the MAIN MENU key.
16 Oven Setup Wall Oven • The TONE (LO/HI) option will appear. • Press the TONE (LO/HI ) key. The display will indicate the pitch of the tone, LOW , MEDIUM , or HIGH . • Continue to press TONE (LO/HI) until you hear the tone you want. You can test each tone by pressing the key just t o the left of the TONE (LO/HI) key.
17 Oven Setup Use and Care Manual Oven Lights If you don’t want the oven lights to come on when th e oven door is open or the door lights are n ot cur- rently set to come on when the door is open: • Press the CANCEL/SEC URE key on the control panel to return to the home screen.

19 Operating Your Oven – The Basics Use and Care Manual GlideRacks™ WARNING: Rearrange the oven racks only when th e oven is cool. Your oven comes with a D acor GlideRack™. You can pull the GlideRack™ out further than the standard racks and still support heavy pots and pans full of f ood.
20 Operating Your Oven – The Basics Wall Oven Before You Cook If you have not used the oven for an extended period of time, the display will go to “sleep”. When the display is sleeping, it is not lit. To wake the di splay (make it re appear), press one of the keys on the control panel or open the oven d oor.

22 Deluxe Features Wall Oven Deluxe Features Help Menu The HELP key on your oven can help you to better understand how your oven works. The HELP key appears on the control panel display most of the ti me after you have selected one of your oven’s fe a- tures.
23 Deluxe Features Use and Care Manual Timers CAUTION: The timers on your oven do not turn the oven on or off. They are only for timing purpose s. When you want to turn the oven on or off auto matically, use the delay option s (see page 42). NOTE: Pressing the CANCEL/SECURE key does NO T turn off the timers.
24 Deluxe Features Wall Oven Dacor Guide: Cook by Food Your oven is equipped with a great convenience: the Dacor Guide Cooking System. Dac or Guide takes a lot of the guesswork out of c ooking. You select the type of food, and the oven will set the temperatur e and mode and show you the amount of time required to cook it.
25 Deluxe Features Use and Care Manual • The Dacor Guide instructions were tested to give you the optimal mode and tempera- ture by food. Press the HE LP key for de- tailed instructions on how to prep are the food.
26 Deluxe Features Wall Oven Main Menu The main menu allows you to access your oven’s deluxe features and cooking modes. • To access th e main menu, press the MAIN MENU key on the home screen.
27 Deluxe Features Use and Care Manual Baking Modes: Description: Jump-in temperature/ cooking suggestions: BAKE Uses only a heat source fr om below the food. This mode is the stand -by, non-convection mode. All baked items will turn out nicely in this mode.
28 Deluxe Features Wall Oven About Pure Convection™ Baking The uniform air circulation provided by Pure Con- vection™ allows you to use the full capacity of your oven. You can successfully prep are food, like cakes, cookies, muffins, and rolls on 2 or 3 racks at the same time.

35 Deluxe Features Use and Care Manual • Press BAKE or PURE CONV ECTION™ . • You will see the preset (jump-in) tempera- ture of 350 ° F (in bake m ode) or 325 ° F (in Pure Convection mode) appear on the dis- play.

37 Deluxe Features Use and Care Manual Dehydrate Dehydration is the process of preserving food by re moving water. If you would like to dehydrate fruits, vegetables, or meats, your oven is equipped with special settings to all ow you to do so easily. • Before you turn on the ov en, position the racks at th e levels you need them.

39 Deluxe Features Use and Care Manual Proof Proofing is the process of allowing dou gh to rise. Your oven’s proof mode is best for yeast breads that require rise time in a warm, draft-free environment. Your oven maintains the i deal temperature for best dough fermentation.
40 Deluxe Features Wall Oven Defrost Things to Keep in Mind: Food that takes an exceptional am ount of time to defrost will not defrost well in a convection oven. You should not defrost anything that would normally take over 2 hours to thaw. The food would be- gin to spoil at the oven’s defrost temper ature of 110°F.
41 Deluxe Features Use and Care Manual • You will see the preset (jump-in) tempera- ture of 110 ° F appear on the display. To de- frost at the preset temper ature, simply press START .
42 Deluxe Features Wall Oven Delay/Timed Cooking If you want to set the oven to automatically turn itse lf on or off at a later time or day, you can use th e delay options feature. The delay options work for all of the various cook modes (except broil) and special features, including Dacor Guide and self -clean.
43 Deluxe Features Use and Care Manual Setting Up the Delay Options • The delay options are se t after you select the featur e you want to use, but just before you pr ess the START key.
44 Deluxe Features Wall Oven • Enter the time you want to start cookin g on the number keypad. You may need to press the AM - PM key to get the correct time of day.
45 Deluxe Features Use and Care Manual • If you are using one of the cook settings, when the duration time expires, th e oven will beep and go into “HOLD” mode for 2 hours. The oven will re duce the temperature to about 150 ° F to keep the food warm and safe for serving.
46 Deluxe Features Wall Oven Meat Probe When you cook foods like roasts and poultry, the inte rnal temperature is th e best way to tell when the food is properly cook ed. The meat prob e that comes with y our oven is an easy way to t ake the guess- work out of roasting.
47 Deluxe Features Use and Care Manual How to Use Your Meat Pr obe • Prepare the meat for cooking prior to setting the ov en. Insert the skewer of th e meat probe into the center of the meat. Make sure that the skewer is not inside any f atty portions of the meat and does not touch any bones.

55 Cleaning and Maintaining Your Oven Use and Care Manual Cleaning the Convection Filter The convection filter is located in the b ack of the oven chamber. If you have a double oven , it has 2 con- vection filters, one in the back of each oven chamber.
56 Cleaning and Maintaining Your Oven Wall Oven Installing your oven’s filter(s) : • The metal clips on the back of the filter hook over the metal bar across the fan hole. Place the filter flat against the back of the oven above the hole with the clips on th e back of the filter pointing down.
57 Cleaning and Maintaining Your Oven Use and Care Manual Cleaning the Accessories IMPORTANT: You must remove all accessories from the ov en during the self-clean cycle. If you leave accessories in the oven during se lf-cleaning, they will permanently discolor and/or beco me permanently damaged.
