3 I. INSTRUCTION FOR T HE INSTAL LER Congratulations! You have just purchased a new Cadco LineChef TM Manual Convection Oven. Let’s go over some of the basics before y ou start using y our new oven.
4 4. INSTALLATION 4.1 ELECTRICAL CONNECTION • Connection to the electrical power so u rce must be done according to all state and local cod es. Before connecting y our oven, make sure th at the voltage and the amps compl y w ith those stated on the data plate of your oven.
5 II. INSTRUCTIONS FOR THE USER Never allow grease spla tters or spills to collect on the inside walls, floor, or ceiling of y our oven. A simple cleaning with soap and water is usually enough to keep your oven spotless and in “ like new” condi tion for years.
6 3.3 HUMIDITY ( On Models XAF-113, XA F-133, XAF-183, XAF-193) • These models have a manual humidity injec ti on feature. Pressing the silver humidit y button introduces a spritz of water to the cookin g cavity, creating a moist cooking environment.
7 III. COOK ING PR INCIPLES 1. COOKING MODES • CONVECTION COOKING ♦ Food products bake in hot, moving air. This moving air removes the cool air barrier b etween the cool food being cooked, and the heat of the ov en chamber. It also helps your fo od products to cook evenly and quickly.
8 2.1 REPLACEMENT OF INTERNAL LAMP To replace the inte rnal lamp: • Disconnect your oven fro m the power supply system and let it cool down. • Remove the side rails. • Unscrew the glass cover and replace the lamp with an identical bulb. • Screw the glass cover b ack on.

10 VII. C OOKIN G GUIDE The first and most important step will be: Have your new oven hook ed up to the proper power and (if applicable) water source. If there is an y doubt about the proper power or the conne ctions, have the oven installed b y a qualified el ectrician acco rding to your local codes.
11 • Cookies Baking Tem perature One of the most common items baked in your Ca dco Convection Oven will be cookies. There are dozens of cookie manufacturers, and th eir product s all have different baki ng chara cteristics. Most of the cookie recipes suggest a baking temperatur e of 325º - 350ºF.
12 • Muffi ns ♦ 15 minutes at 325ºF/ 20% humidity works well for most standard siz e muffins. ♦ For jumbo muffins set the oven temp at 300ºF/ 20% humidity and bake the muffins for 20 minutes or until a toothpick comes out c lean. ♦ The more dense your batter is the l onger your muffins w ill take to bake.

14 • Rare Roast Beef ♦ Rare beef is considered b y most people to be 130º F. ♦ The USDA states that full muscle beef when roast ed to an internal temperat ure of 130ºF and maintained at that temperature for 121 minutes is considered saf e to eat.
