2. 2 OVEN C ONTROLS AND C OOKING THE SPEEDCOOK OVEN In the T urboChef ® Speedcook Oven, the traditional explanation of baking remains the same. H owever , the hot air is moved thr ough the cook cavity at higher speeds than in a traditional oven.

3. 2 OVEN C ONTROLS AND C OOKING THE BOT TOM OVEN Con vec tion Bake Convection Bake uses the same heating elements as Bake with the addition of a convection fan and heater in the back of the cook cavity . is fan and heater help heat and circulate the air evenly throughout the chamber to produce superior browning and crisping.
OVEN C ONTROLS AND C OOKING THE BO T T OM OVEN 3.3 The Sabbath Mode e Sabbath M ode, available for religious faiths with “ no work ” requir ements on the sabbath, cooks food over a 72 hour period. e Sabbath M ode is Star-K certifi ed.
3. 4 OVEN C ONTROLS AND C OOKING THE BOT TOM OVEN Self- Clean Mode e bottom oven is self-cleaning. U sing heat up to 900°F (482°C), the oven will self-clean the inside of the cook cavity in approximately 4.5 hours. NO TE: For the D ouble W all Oven, while one oven is in self-clean mode the other will not be functional.

INFO MODE 4.1 Over view of the I nfo Mode F rom the Info M ode, the user can - Adjust oven sounds - Adjust display settings - Adjust oven units and measur ements - Access help topics and general cooki.
4. 2 INFO MODE Adjusting the Oven ’ s Units & Measurements e oven defaults to F ahrenheit. T o change between F ahrenheit and Celsius, 1. Ensure that the CookWheel is turned to off . 2. Pr ess the Info key . 3. Scroll to and select “Oven Setup .
INFO MODE 4.3 NO TE: If the USB fl ash drive is not detected by the oven, a message will appear (F igure 4.10). E nsure the USB fl ash drive is correctly inserted and press S tart or the inner CookWheel knob to continue. e oven will continue to display this screen until the user selects Cancel or a USB fl ash drive is detected.
4. 4 INFO MODE Oven Con guration F rom the Installer Setup scr een, scroll down and select “Oven Confi guration ” to confi gure the o ven for double wall or single wall (F igure 4.16). CAUTION: If the o ven is not set to the proper confi guration, it will not operate correctly .

OVEN SY STEMS 5.1 Heater Assembly e S peedcook oven heater assembly consists of three elements. e elements are voltage specifi c and cannot operate properly without the correct voltage applied. Confi rm incoming voltage matches the oven ’ s specifi cations.
5. 2 OVEN SYSTEMS F or Gen 2 ovens, operation is the same through the CookWheel, but power is r eceived from terminal RBJ20-2 of the relay boar d. Speedcook Oven Door is section contains informati.

5. 6 OVEN SYSTEMS 10. Close the door . 11. Ensure the door opens and closes fr eely . 12. P ush the oven back into its original position. Halogen Bulb Replacement CAUTION : DO NO T touch the bulb with bare fi ngers; rather , use gloves, cloth, or tissue when handling the bulb.
OVEN SY STEMS 5.7 Magnetrons e magnetron generates micro wave energy by means of 4000+ volts supplied by the micro wave circuit. Due to the v ery high voltage present during operation, the only safe way to test this component is by a resistance test of its fi lament with the power disconnected and the capacitors properly discharged.
5. 8 OVEN SYSTEMS Air Switch (Single W all Oven) e air switch monitors the amount of air coming from the exhaust blow er in the single wall oven. I t is a fail-safe device that communicates to the control board whether or not the exhaust blo wer is working.
OVEN SY STEMS 5.9 sees an open door condition. e bottom fuse is rated 15 amps. I t is wired in the circuit to protect the low voltage components in the o ven. Gen 1 ov ens also contain a 5-amp fuse located on the right magnetron cov er . is fuse is powered by the K9 relay to pro vide power to the upper and lower cooling fans.
5.10 OVEN SY STEMS Relay - K2 Monitor (Gen 1 Oven) e K2 relay is a 30 amp , double-pole, double- throw , class F , 24 VDC relay coil. I t is used in the magnetron circuit along with the K3 and K4 relays.
OVEN SY STEMS 5.11 SD Card e SD card, which is inserted into the control board, stor es the control software for the o ven. CAUTION: When inserting an SD card, always ensure it is set to unlocked; otherwise the oven will not pr operly save settings.
5.12 OVEN SY STEMS Solid State Relay - K1 L1 Speedcook Heating Elements e K1 solid state relay is a 240 V AC, dual 40 amp relay . is relay supplies L1 voltage to the S peedcook oven ’ s heating elements.
OVEN SY STEMS 5.13 Plug the the other end of the molex cable into the USB board as sho wn in Figure 5.5. E nsure that, when facing the oven, the r ed stripe is on your left and the two empty sockets are on your right. TROUBLESHOO TING 6.1 Over view of T r oubleshooting is section contains information pertinent to troubleshooting issues with the T urboChef ® Residential D ouble W all or Single W all ovens.
6. 2 TROUBLESHOO TING - With the door fully closed, loosen the door switch ’ s adjustment scr e w(s). - With a screwdriv er , adjust the switches at the triangle adjustment slot. - When the door open message disappears, mov e the slide an additional 1/32 in (.
TROUBLESHOO TING 6.3 5. T urn the magnetrons off . Depending on the measurement, follow the belo w steps. If 15-19 amps are pr esent, verify the magnetron cooling fans are running whenever the magnetrons are running. e thermostats can cause the magnetrons to shut down and r eset when cool.

TROUBLESHOO TING 6.5 6. T est the switch in the closed position by turning the oven mode dial to the B ake position. 7. A pply the probes of the voltmeter to the same CookWheel terminal and ground. e voltage reading should be 120 V AC. - If no voltage is present, the ov en mode switch is stuck open and must be replaced.
6. 6 TROUBLESHOO TING T roubleshooting the R TD (Single W all Oven), 1. D isconnect power from the ov en. 2. D isconnect J15 from the control board. 3. T est the R TD on pins J15-20 and J15-21 for 109 ohms at 75°F (24°C). 4. I f 109 ohms (or appropriate value) are pr esent, replace the control board and r etest.
TROUBLESHOO TING 6.7 1. R eplace the bulb (see page 5.5). 2. I f replacing the halogen bulb did not fi x the problem, access the rear of the halogen light assembly and disconnect the two green wires at the wire connectors. 3. A pply the probes of the voltmeter to the two green wires leading from the o ven.
6. 8 TROUBLESHOO TING 3. T urn the CookWheel to favorites or the lower cook mode knob to bake. Y ou should hear the fans running and also feel a slight amount of air being discharged from the bottom of the oven. 4. I f the fans are not operating, remo ve the oven from the cabinet approximately 11” (279 mm) and remove the top fr ont panel.
TROUBLESHOO TING 6.9 - F or the single wall oven, turn the CookWheel to favorites and test pins J16-2 and J16-3 for 0 VDC at the contr ol board. If 0 VDC is present, then the sail switch is activated, indicating the lo wer fan is turning. If appro ximately 4.
6.10 TR OUBLESHOOTING T esting a C apacitor DANGER: Never attempt any measur ement of the capacitors while they are enabled. Lethal voltage will be present. M easure only in compliance with these procedures. T o test for an open or shorted capacitor: 1.
TROUBLESHOO TING 6.11 1. Disconnect the power source and discharge the high-voltage capacitors. 2. Isolate the magnetron from the circuit b y removing the wires fr om terminals F and F A. 3. An ohmmeter connected between the fi lament terminals (F , F A) should indicate a reading of less than 1 ohm.
6.12 TR OUBLESHOOTING Heater Element, Speedcook Oven Remo ve the wire connections and apply the probes of an ohmmeter to each element’ s respective termi- nals. e resistance should register 23 ohms for a 240 V AC unit and 17.0 ohms for a 208 V AC unit.
TROUBLESHOO TING 6.13 T esting f or Control Voltage to the K8 Rela y (Gen 1) DANGER: A high-voltage capacitor is located near this relay . Contact with the high-voltage capacitor could result in serious injury or death. 1. T urn the CookWheel to Bake to begin the preheat cycle.
6.14 TR OUBLESHOOTING NO TE: Line voltage is routed to the bottom oven from the terminal block in the upper electrical compartment. Brown, blue, and white wir es will be traveling together on the far left side of the ov en frame. 4. V erify that no amperage is being drawn to the elements.
