(e) Use wedges in the back and on the sides of the deck if the decks ar e loose. The three decks shoul d be tight agai nst each other wit h no gap between them (See fig. 8). (f) Put t he hearth t rim i n place betw een the deck and the door. W edge s Figure #8 C.
(i) A separate shut- off valve for each ov en must be prov ided. It should be as cl ose as possible to the place where the gas supply line goes into the ov en. It must be located such t hat it is easily accessible. (j) W hen stacking w ith anot her oven, two shut -off valves, one for each of the tw o ovens, must be provi ded.
A . PILOT BURNER LIGHTI NG PROCEDURE: (a) Par tiall y depress and t urn the gas cock di al to ‘O FF’(•) position. (b) W ait for fiv e minutes to allow gas, whi c h may have accumulated in the bur ner compartment, to escape. (c)Turn gas cock dial to ‘PILOT’( * ) positi on.
10. FLA ME DIVERT ERS: Flame div erters di stribute the heat ev enly bel ow the baking deck. They must be in good condition and properly placed above t he burners in the burner chamber in order to be effective. Damaged or improper ly installed flame divert ers adversel y affect the oven perfor mance.
Baking: (a) Aft er preheati ng, raise the thermost at setting to y our baking temper ature. (b) Check the bottom color of the Pie and close the push/ pull sli des partially (halfw ay ) after the 4th.
3. FLUE VENT: Ventilat ion syst em must be inspect ed every six mont hs and maintained clean and free of obstructions. 4. OV EN INTE RIOR : Clean the ov en interi or only when the ov en is cold. Use only the detergent sol utions and cleaner s that meet the nati onal and / or local codes.
