19 _ Surface cooking HOW T O SET THE APPLIANCE FOR SURF ACE COOKING • The surface elements may be hot even when o and burns can occur . Do not touch the surface elements until they have cooled down suciently . • At high or medium-high settings, never leave food unattended.

21 _ Surface cooking USING THE PROPER COOKWARE Using the right cookware can prevent many pr oblems, such as uneven cooking or extended cooking times. Using the proper pans will reduce cooking times and cook food mor e evenly . Check for flatness by rotating a ruler across the bottom of the cookware.
