9 Storage Store the fr ypan upr ight with the lid in position. Store the T emperature Contr ol Probe carefully . T ake care not to knoc k or drop the pr obe as this can cause damage. If damage is suspected, return the T emperature Contr ol Probe with the fr ypan to your nearest Bre ville Ser vice Centre f or inspection.
10 Preheat y our fr ypan bef ore adding any ingredients, allow the temperatur e light to cycle ‘on’ and ‘of f’ sev eral times. This will allow the frypan to reach an ev en high temperatur e. Stir fr ying is a dr y heat cooking method and is best suited to tender cuts of meat.
11 Buy meat strips from y our butcher or from y our super mak et, or prepare meat strips from recommended cuts listed abov e by remo ving any f at and slicing thinly across the gr ain (across the direction of meat fibres). Slicing across the gr ain ensures tender ness .
