4 CHAPTER 3 INST ALLA TION of the S teamChef A. Selecting a Location for the S teamChef 1. For safe and ef ficient ope ration, observe the follo wing criteria when selecting an operating lo cation for this appliance: a. Installation must comply with all local fire and health codes.

7 3. T esting Gas Supply Lines 1) T est all pipe joints for leaks with soap and water sol u tion. 2) Check all connectio ns for p roper tightness. 3) Remove the control side p anel to inspect gas connections insi de the S teamChef. 4) Open the gas supply valves.
8 2. Connection of the Wa ter Supply Lines • The Installer/ Own er is responsible for t he correct water connectio n of the S teamChef. • When connecting water supply lines o bserve the following instructions, an d any and all other applicable national, st ate, and local codes and reg ula tions.

10 Steam Ch e f M A IN EXT ERN AL POWER SWITCH • The fuse or breaker and disconnect swit ch combinat ion is called the “Main External Power Switch.” See Figure 3-7. • This appliance is not suit able for connection to a po wer cord. Do NOT use a power cord.
11 8. Do NOT connect the S teamChef drain directly to drains or to the plumbing of any other equipment. 9. Do NOT inst all a trap or shutoff in the drain line. 10. The total length of pipe and numbe r of bend fitti ngs required to reach the open dr ain determine s the pipe size used to extend the drain line to an open drai n.
12 The fan guard helps protect the ope rato r from injury caused by the rotating fan blade s. Never operate a S teamChef without the fan guard p roperly installe d. Operating a S teamChef without the fan guar d properly installed ca n cau se injury , equipment damage, and reduce perfo rmance.

14 CHAPTER 3 ST ARTUP PROCEDURE A. In the Event of a Power Failure • Do NOT attempt to operat e a S teamChef during a power failure. DO NOT TR Y TO LIGHT BURNERS WITH A FLAME. The Steam Chef has an electronic ignition sy stem which automatically light s burners, senses the flame, and controls g as flow .

Lighting and Shut down Instructions • Refer to the Operator ’s Manual for complete operating and safety instruction s. • This procedure should be performed only b y a service technician or inst aller • Complete the Burner Ignition T est and S tartup Procedure before st arting the Operating T ests.

17 CHAPTER 4 OPERA TI NG TESTS This procedure evaluates the function of t he major operating cont ro ls of a S teamChef. • The S teamChef may be equipped with a Keypad Control Panel, Di a l T imer Control Panel, or an ON/OFF Control Panel.
18 C. Operating T ests (Continu ed from Dr ain Rinse Inspection) 1. At the start of this test the cooking com p artment door should be o pen and the controls should be set as follows: a. The Main External Power Switch is ON. b. The ON/OFF lever/switch is OFF (The green indicator on the cont rol panel is NO T lit).
19 Note: After 60 minutes of uninterru pted operation of both the T imer model S teamChefs in Manual Mode, and ON/OFF model S teamChefs turned ON, the S teamChef automatically starts the Energy/W ater Saver feature • The cooking comp artment returns to st andby temperature and condenser water flow sto p s.
20 D. Shut down of the S teamChef af ter T esting (Continued from Operating T est s) and Front Burner Cover Inst allation 1. T urn the S t eamChef OF F by turning the ON/OFF lever to the OFF position. • The green Power ON indicator light turns OFF , OR the Keyp ad turns OFF .
