4 GETTING TO KNO W THE PizzellePro ® T ake a minute to identify the key features and controls of the PizzellePro ® (Figure 1). T o open the lid, release the locking latch (Figure 3) and lift the insulated front plastic handle. Electronic controls are on the control panel, Figure 2.
Note the numbers on the color control dial. The pizzelle will be darker or lighter in color depend - ing on the exact setting of this dial. The color control dial is rela tively sensitive and fractional numerical changes can make a noticeable difference in color and baking time.

7 PIZZELLE TRADITIONS It is generally believed that pizzelles originated in a middle region of Italy in ancient times to mark an annual celebration. Initially baked over an open fire with relatively simple but effective irons, the early pizzelles often were proudly embossed with the family crest or some hint of the village of origin.

9 OTHER V ARIA TIONS Crisco, margarine or equivalent shortening can be used as a direct substitute for butter using the quantity called for in the recipe. The quantity of sugar can be varied slightly but if the mix becomes too thick add a few tablespoons of water to adjust the stiffness and flow of the mix.

11 Chocolate covered pizzelles or cannoli shells are another special treat. T o melt the chocolate, place it in a bowl and hea t in the micro wave or in a saucepan on lo w hea t, stirring periodically as it melts.

4 SE F AMILIARISER AVEC LE Pizz ellePro ® Prenez un instant pour identifier les fonctions et les commandes principales du PizzellePro ® (F igure 1). Pour ouvrir le couverc le, libérez le loquet verrouillable (Figure 3) et soulevez la poignée frontale isolan - te en plastique.
5 Le PizzellePro ® est équipé d’un loquet verrouillable conçu pour minimiser le soulèvement du couvercle durant de c ycle de cuisson. Il permet à chacune des trois pizzelles de garder une épaisseur uniforme. Le loquet peut facilement être déverrouillé en soulevant le cran de sûreté manuel (Figure 3), qui est intégré au loquet.
6 PROCÉDURE DE CUISSON Préparez la pâte à pizzelle et procédez comme suit : 1. Réglez le cadran de contrôle de la couleur entre 3 et 3,5 et laissez le PizzellePro ® ch auff er comme décrit plus haut.

Laissez refroidir légèrement. En remuant vigoureusement, incorporez doucement le chocolat fondu au mélange d’œufs et de beu rre .
